Balgone Estate Meat: Why We Stock It and Why It Sells Out

Two months ago we started stocking meat from Balgone Estate. It has quickly become one of the most popular ranges in the shop. Customers ask about it regularly, and fresh delivery weeks see cuts move fast. This post explains what we carry, where it comes from, and why we think it's worth the premium.

Where Balgone Estate Meat Comes From:

Balgone Estate sits just outside North Berwick — a 1,500-acre working farm that has been farmed since 1700. It is the kind of provenance that is genuinely hard to find: a single, named estate, a few miles up the road, producing meat from animals raised on the land you can see locally.

The cattle are Aberdeen Angus, raised on Balgone's rich East Lothian pastures as a suckler herd. The pigs are rare-breed Oxford Sandy & Black — one of Britain's oldest and rarest native breeds — raised in a low-intensity, stress-free environment that produces noticeably more flavourful pork.

The estate also operates with a clear commitment to sustainable and environmentally responsible farming. Beetle banks, hedgerows, and managed grass margins run throughout the farm to support biodiversity which ties in perfectly to what we do here! In a separate regenerative programme, Balgone has planted over 1,400 trees in the past two years. For shoppers who want to know that the food they buy is produced responsibly, Balgone is the kind of supplier that holds up to scrutiny.

What We Stock at Farm Shop At The Mart

We carry a full range of Balgone cuts and products, covering both large roasting joints and everyday cooking staples. Balgone are slow and considered with how they choose what meats become available and we like it that way, they only take an animal when it is going to be used straight away, this means a number of key things, for instance we don’t always have fresh meat, often we just have frozen meat but whenever it is available we have fresh stock in, secondly we don’t choose what cuts we are given, we are assigned them. We sell out straight away of Beef Short Rib, but these aren’t always available, at the moment we are stocking the following products:

Large joints: Beef topside & Pork shoulder

Everyday cuts: Beef stir fry strips &Pork chops

Mince: Beef mince & Pork mince

Sausages: Traditional pork sausages & Beef sausages

The large joints have been a particular hit. A Balgone beef topside — Aberdeen Angus, grass-fed, from an estate twelve miles away — is a Sunday roast with a story attached. The pork shoulder, slow-cooked, is the kind of thing that makes a kitchen smell right for an afternoon.

The mince and sausages offer the same provenance at a lower price point, and for everyday cooking — a weeknight bolognese, a Saturday morning fry-up — the quality difference is noticeable.

What Wine to Drink With It

We stock over 200 wines in the shop, and the Balgone range pairs naturally with some of the best of them. Here are a few starting points.

Beef topside and beef mince (bolognese, ragu) Grass-fed Aberdeen Angus beef has good structure and depth, and it suits wines with the same. A Côtes du Rhône, a Malbec from Argentina, or a Rioja Reserva all work well with a roast. For a bolognese or mince-based dish, a Montepulciano d'Abruzzo or a robust Bordeaux-style blend hits the mark.

Beef stir fry strips For Asian-style cooking, a dry Riesling or an unoaked Chardonnay cuts through the soy and sesame without competing. If you prefer red, a Pinot Noir — lighter-bodied and versatile — handles spice and umami well.

Pork shoulder and pork chops Pork is one of the most wine-friendly meats on the table. A slow-roasted Balgone pork shoulder suits a white Burgundy or a Viognier if you want white; for red, a Grenache or a lighter Côtes du Rhône is hard to beat. Pork chops, simply pan-fried, work well with an off-dry Alsatian white or a fruity Pinot Gris.

Traditional sausages and beef sausages For a sausage supper or toad-in-the-hole, think easy-drinking and unpretentious a good weeknight Shiraz is the perfect option. Nothing that competes — just something that complements.

If you are unsure what to choose, ask in the shop. With over 200 wines on the shelves, the team can point you in the right direction for your cut and your budget.

Fresh Deliveries Every Three to Four Weeks

We take fresh stock in from Balgone every three to four weeks. Fresh delivery weeks are announced in the shop and on our social channels.
